Currently loving: Chocolatey Granola

Granola. So good. Full of healthy ingredients. Delicious. A great way to start the day! But don’t BUY it you guys! It’s so easy to make and can be tailored to your tastes (or whatever you’ve got on hand at the time – my personal favourite), made much healthier (or not, I suppose) and done in large batches to keep you going for a while.

See below for what we’ve been doing at my house recently. I’ve adapted this from a couple of different recipes (I’m looking at you My New Roots and Jessica Cox), and initially tailored to what we had in the kitchen at the time. But since then, I’ve made it again a number of times and the results are consistent (and delicious), so I’m ready to share…

Ingredients
  • 3 cups oats
  • 1 cup roughly chopped nuts / sunflower seeds / pepitas
  • 1/4 cup desiccated or shredded coconut
  • 1 tablespoon chia seeds
  • 1 tablespoon sesame seeds
  • 2 teaspoon cinnamon
  • 1/3 cup cacao powder
  • 1/4 cup coconut oil
  • 1/2 cup honey / maple syrup / rice malt syrup
Method
  • Preheat oven to 180 C
  • Combine dry ingredients in large bowl
  • Gently heat coconut oil and maple syrup / honey until melted and combined
  • Pour over dry ingredients and combine well (the liquid should coat the dry ingredients, it will look ‘crumbly’)
  • Spread the mix loosely over a large baking tray and bake for 15-20 mins
  • Let cool completely and store in airtight container, out of direct sunlight
This will keep for 2-3 weeks… if you don’t eat it before then!
