What to use when eggs are out

I’ve blogged about egg-free cooking before, but I think it’s worth another post.

Particularly as I’ve been chatting to a few folk recently who can’t have eggs, but want to get stuck into some festive season baking. What are the options? Numerous, as it happens.

You can use a commercial egg-replacer, as found in health food stores. OR… reach into your pantry and give one of these a go – to replace one egg, use one of the following:

1 tablespoon chia seeds with 3 tablespoons water (let sit for 15 mins)
1 tablespoon ground flaxseed with 3 tablespoons warm water
1/4 cup cooked pumpkin
1/4 cup puréed prunes
2 tablespoons arrowroot flour
2 teaspoons baking powder
1/2 ripe banana
1/4 cup applesauce
